  • Glutelin accounts for about 25-50% of the total protein equivalent to Prolamin and also concentrates in the outer part of the grain. In addition, Gluten is a mixture of Prolamin and Glutelin, insoluble in water but made with water into a paste, which is elastic, elastic and sticky. Proteins of rice without Prolamin should not use rice to make bread like bread. The content of minerals in cereals ranges from 2-4%, mostly concentrated in the outer layer, mainly in the Aloron class.
